Arugula Salad With Fig-Infused Vinaigrette

Summertime is Salad Time. There is nothing more refreshing than a salad for a snack on a hot summer day. Try Mulate’s  Arugula Salad With Fig-Infused Vinaigrette when you get hungry on one of these hot summer afternoons. Our arugula salad is healthy, very easy to make and will have your family asking for more. Give it a try!

Arugula Salad

  • 5 cups fresh arugula
  • 1/4 cup pine nuts
  • 1 small can mandarin slices, drained
  • 1/2 small red onion, thinly sliced

Wash and dry arugula and in a large serving bowl. Toast pine nuts in a small nonstick pan over medium heat. Remove from heat when golden brown and add to arugula. Add mandarin slices and onion.

ARUGULA SALAD WITH FIG-INFUSED VINAIGRETTE

Fig-Infused Vinaigrette

  • 3/4 cup extra virgin olive oil
  • 1/4 cup fig-infused balsamic vinegar
  • 1/4 tsp. Dijon mustard
  • 1 tsp. salt
  • 3 turns fresh-cracked black pepper

In a small bowl, whisk olive oil, vinegar, and mustard until smooth. Blend in salt and pepper and pour over salad. Toss and enjoy!
