What You Need
4 cups uncooked small elbow macaroni
4 hardboiled eggs
4 sweet gherkins
3 carrots
4 stalks celery
1 medium onion
2 cups mayonnaise
1/2 cup white vinegar
4 tbsp. sugar
1/2 tsp. salt
1 tsp. black pepper
1/2 tsp. cayenne pepper
How It’s Done
Boil macaroni and drain. Grate eggs, gherkins, carrots, celery, and onion, using the largest holes on our grater. In a large bowl, mix cooked macaroni and grated vegetables. Stir in mayonnaise. In a separate bowl, mix vinegar and sugar until sugar has dissolved. Add dry seasonings and pour over salad, mixing well. Cover and chill for at least 24 hours. This recipe is great for parties and barbecues.
