• 1 cup shredded Swiss cheese

  • 1 small onion, minced

  • 1 lb. crawfish tails

  • 2 frozen pie shells (9 inch)

  • 4 large eggs

  • 2 cups heavy cream

  • 1 tsp. salt

  • 1/4 tsp. cayenne pepper

  • 1/8 tsp. sugar

crawfish lent recipePreheat oven to 400°.
Place half of the cheese, onion and crawfish in each pie shell.
In a mixing bowl , beat eggs, then add rest of ingredients, mixing until well blended.
Pour half the mixture into each pie shell. Bake for 15 minutes.
Reduce heat to 350° and bake 30-45 minutes, or until tops have browned slightly.
Serve at room temperature.
