What Are You Cooking For Lent?
We are in the middle of Lent, the 40 day period which starts on Ash Wednesday and ends Easter. Some mark Lent by fasting, both from food and festivities. Fasting rules say you should not eat lamb, chicken, beef, pork, ham, deer and most other meats. If you are running out of ideas of what to prepare during Lent, we may have an idea for you. Why not give Mulate’s Crawfish Etouffee a try?
What You Need
4 tbsp. unsalted butter
1/4 cup flour
1 cup diced onion
2 cloves garlic
3 cups of vegetable (or chicken stock)
1 bay leaf
1 tbsp. Mulate’s Cajun Seasoning
1 lb. crawfish tails with fat
Cooked rice
How It’s Done
For our Lent dish idea, melt butter over medium-low heat. In a large skillet. Add flour, stirring constantly for 8-10 minutes to make a roux the color of peanut butter. Add onion and cook for 5 minutes, or until onion is tender. Add garlic and cook for 3 minutes more. Mix in stock, bay leaf, and Mulate’s Cajun Seasoning; simmer for 20 minutes. Add crawfish and any collected creawfish fat. If you are using packaged crawfish, add 1 tbsp. water to the back and swish it around. Pour the water into the pot so you don’t miss any good flavor. Simmer for 5-10 minutes. Remove bay leaf. Serve over rice. This Lent dish serves about 4-6 people.
