Shrimp Salad

It’s hot outside and if you don’t feel like cooking much these days, why not make a refreshing salad. Salads are healthy, easy to make and just perfect for this time of year. Take a look at Mualte’s Cajun Restaurant Shrimp Salad.  The recipe adds a Cajun twist to this all time favorite.

What You Need

  • 8 cups of water

  • 2 tbsp. Mulate’s Cajun Seasoning

  • 1 and a half lb. medium shrimp, peeled

  • 1 stalk celery, diced

  • 2 hard-boiled eggs

  • 4 tbsp. mayonnaise

  • 1/2 tbsp. creole mustard

  • 1/2 tsp. cayenne pepper

How It’s Done

Shrimp SaladIn a large stockpot, boil water and add seasoning and shrimp. Bring water back to a boil and cook shrimp for 5 minutes. Drain shrimp, let cool, and coarsely chop.

In a medium bowl, mix shrimp and celery. Remove yolks from eggs and set aside. Chop egg whites and mix into shrimp mixture. In a separate small bowl, mash egg yolks and add mayonnaise. Creole mustard, and cayenne, mixing well. When the “dressing” is well blended and smooth, pour into the shrimp mix. Stir until dressing is spread evenly throughout. Serve on lettuce or non toasted bread.
