Chicken And Sausage Gumbo

Chicken Sausage GumboNow that temperatures are set to get colder how about a hearty soup for dinner? Mulate’s Chicken and Sausage Gumbo is the perfect meal for a chilly night. It’s easy to make and will make your family happy and full!

What You Need

1 large onion, diced
1 small bell pepper, diced
1 tbsp oil
1 tbsp salt
1 tsp cayenne pepper
4 qt water
1 cup dark roux
3 lb chicken, cut up
3 links smoked sausage, cut into 1/2 inch pieces
3 cups cooked white rice

How It’s Done

In a large pot, saute onion and bell pepper in oil for about 10 minutes. Add seasoning, then water, and bring to a boil. Add roux and stir constantly until melted. Add chicken and let simmer on medium-high heat for 1 hour. Add smoked sausage and let cook for 20 minutes more. Turn the heat off and let the gumbo rest for 20-30 minutes before serving.  Serves 6 to 10 people.

Letting your gumbo rest will allow the flavors come together and will make your gumbo even better. Serves 6 to 10 people.
